Poultry Brine

Ingredients

  • 1000 g water
  • 50 g salt (kosher or pickling)
  • 25 g brown sugar
  • Herbs of choice (optional, skip for hot wings)

Instructions

  1. Combine water, salt, and brown sugar in a container and stir until dissolved
  2. Add herbs if using
  3. Submerge poultry in brine and refrigerate

Notes

  • Ratio is 1000:50:25 (water:salt:sugar), multiply as needed for more brine
  • Skip herbs if brining for hot wings
