Tuna Melt

Ingredients

  • 2 (5 oz) cans tuna, drained
  • 2 tbsp mayo
  • 1 tbsp dijon mustard
  • 1/4 cup diced celery
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 4 slices bread
  • 4 slices cheddar or swiss cheese
  • Butter for the skillet

Instructions

  1. Mix tuna, mayo, mustard, celery, lemon juice, salt, and pepper in a bowl
  2. Butter one side of each bread slice
  3. Place two slices butter-side down in a skillet over medium-low heat
  4. Top each with a slice of cheese, a scoop of tuna salad, another slice of cheese, and the second bread slice butter-side up
  5. Cook until bottom is golden brown, about 3-4 minutes
  6. Flip and cook until the other side is golden and cheese is melted
  7. Slice and serve

Notes

  • The double cheese layer (under and over the tuna) helps seal the sandwich
