Tuna Melt

Ingredients
- 2 (5 oz) cans tuna, drained
- 2 tbsp mayo
- 1 tbsp dijon mustard
- 1/4 cup diced celery
- 1 tbsp lemon juice
- Salt and pepper to taste
- 4 slices bread
- 4 slices cheddar or swiss cheese
- Butter for the skillet
Instructions
- Mix tuna, mayo, mustard, celery, lemon juice, salt, and pepper in a bowl
- Butter one side of each bread slice
- Place two slices butter-side down in a skillet over medium-low heat
- Top each with a slice of cheese, a scoop of tuna salad, another slice of cheese, and the second bread slice butter-side up
- Cook until bottom is golden brown, about 3-4 minutes
- Flip and cook until the other side is golden and cheese is melted
- Slice and serve
Notes
- The double cheese layer (under and over the tuna) helps seal the sandwich
