Chicken Quesadillas

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1 1/2 cups shredded mexican blend cheese
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper (optional)
  • Butter or oil for the skillet
  • Sour cream, salsa, and guacamole for serving

Instructions

  1. Heat a large skillet over medium heat and add a small amount of butter or oil
  2. Place a tortilla in the skillet
  3. Spread half the cheese on the tortilla, then layer chicken, onion, and bell pepper
  4. Top with remaining cheese and fold tortilla in half
  5. Cook until bottom is golden and cheese begins to melt, about 2-3 minutes
  6. Flip carefully and cook the other side until golden
  7. Remove, let rest 1 minute, cut into wedges
  8. Serve with sour cream, salsa, and guacamole

Notes

  • Use leftover rotisserie chicken for the fastest version
  • Press down gently with a spatula while cooking for better browning
