Chicken Quesadillas

Ingredients
- 2 large flour tortillas
- 1 cup cooked chicken, shredded
- 1 1/2 cups shredded mexican blend cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper (optional)
- Butter or oil for the skillet
- Sour cream, salsa, and guacamole for serving
Instructions
- Heat a large skillet over medium heat and add a small amount of butter or oil
- Place a tortilla in the skillet
- Spread half the cheese on the tortilla, then layer chicken, onion, and bell pepper
- Top with remaining cheese and fold tortilla in half
- Cook until bottom is golden and cheese begins to melt, about 2-3 minutes
- Flip carefully and cook the other side until golden
- Remove, let rest 1 minute, cut into wedges
- Serve with sour cream, salsa, and guacamole
Notes
- Use leftover rotisserie chicken for the fastest version
- Press down gently with a spatula while cooking for better browning
