Loaded Baked Potato

Ingredients

  • 2 large russet potatoes
  • 2 tbsp olive oil
  • Salt
  • 4 tbsp butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400F
  2. Scrub potatoes, poke several times with a fork
  3. Rub with olive oil and sprinkle with salt
  4. Place directly on oven rack and bake for 50-60 minutes until tender when pierced
  5. Slice open and fluff the insides with a fork
  6. Add butter, sour cream, cheese, bacon, and green onions
  7. Season with salt and pepper

Notes

  • For crispier skin, rub with oil and salt before baking
  • Microwave for 5 minutes first to cut bake time in half
