Loaded Baked Potato

Ingredients
- 2 large russet potatoes
- 2 tbsp olive oil
- Salt
- 4 tbsp butter
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 4 strips bacon, cooked and crumbled
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat oven to 400F
- Scrub potatoes, poke several times with a fork
- Rub with olive oil and sprinkle with salt
- Place directly on oven rack and bake for 50-60 minutes until tender when pierced
- Slice open and fluff the insides with a fork
- Add butter, sour cream, cheese, bacon, and green onions
- Season with salt and pepper
Notes
- For crispier skin, rub with oil and salt before baking
- Microwave for 5 minutes first to cut bake time in half
