Chicken Salad

Ingredients
- 2 cups cooked chicken, shredded or diced
- 1/3 cup mayo
- 1 tbsp dijon mustard
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1 tbsp lemon juice
- Salt and pepper to taste
- Bread, croissants, or lettuce wraps for serving
Instructions
- Combine chicken, mayo, mustard, celery, onion, and lemon juice in a bowl
- Mix well and season with salt and pepper
- Serve on bread, croissants, or in lettuce wraps
- Refrigerate leftovers
Notes
- Rotisserie chicken works great for this
- Add grapes, pecans, or dried cranberries for variation
- Keeps in the fridge for 3-4 days
