Chicken Salad

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup mayo
  • 1 tbsp dijon mustard
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Bread, croissants, or lettuce wraps for serving

Instructions

  1. Combine chicken, mayo, mustard, celery, onion, and lemon juice in a bowl
  2. Mix well and season with salt and pepper
  3. Serve on bread, croissants, or in lettuce wraps
  4. Refrigerate leftovers

Notes

  • Rotisserie chicken works great for this
  • Add grapes, pecans, or dried cranberries for variation
  • Keeps in the fridge for 3-4 days
