Chicken Stir Fry

Ingredients

Stir Fry

  • 1 lb chicken breast, sliced thin
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp vegetable oil
  • Rice for serving

Sauce

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp cornstarch
  • 1 tsp sugar
  • 1 tbsp water

Instructions

  1. Whisk all sauce ingredients together in a small bowl and set aside
  2. Heat 1 tbsp oil in a wok or large skillet over high heat
  3. Cook chicken until browned and cooked through, about 4-5 minutes, remove and set aside
  4. Add remaining oil, cook garlic and ginger for 30 seconds
  5. Add broccoli, bell pepper, and snap peas, stir fry for 3-4 minutes until crisp-tender
  6. Return chicken to the wok
  7. Pour sauce over everything and toss until coated and sauce thickens, about 1 minute
  8. Serve over rice

Notes

  • Cut all ingredients before you start cooking -- stir fry moves fast
  • Swap chicken for beef, shrimp, or tofu
