Pan-Seared Pork Chops

Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, smashed
- 2 sprigs fresh thyme or rosemary
- Salt and pepper
Instructions
- Pat pork chops dry and season generously with salt and pepper on both sides
- Heat olive oil in a large skillet over medium-high heat until shimmering
- Sear pork chops undisturbed for 4-5 minutes until a golden crust forms
- Flip chops, add butter, garlic, and herbs to the pan
- Baste chops with the melted butter using a spoon for 3-4 minutes
- Cook until internal temperature reaches 145F
- Rest for 5 minutes before serving
Notes
- Let chops come to room temperature for 15 minutes before cooking for even searing
- The butter basting adds flavor and keeps chops juicy
