Pan-Seared Pork Chops

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh thyme or rosemary
  • Salt and pepper

Instructions

  1. Pat pork chops dry and season generously with salt and pepper on both sides
  2. Heat olive oil in a large skillet over medium-high heat until shimmering
  3. Sear pork chops undisturbed for 4-5 minutes until a golden crust forms
  4. Flip chops, add butter, garlic, and herbs to the pan
  5. Baste chops with the melted butter using a spoon for 3-4 minutes
  6. Cook until internal temperature reaches 145F
  7. Rest for 5 minutes before serving

Notes

  • Let chops come to room temperature for 15 minutes before cooking for even searing
  • The butter basting adds flavor and keeps chops juicy
