Homemade Cheeseburger Macaroni

Ingredients

  • 1 lb lean ground beef
  • 1/2 cup finely diced onion (or 1 tsp onion powder)
  • 2 cups milk
  • 1 1/4 cup chicken broth
  • 1 1/2 cups elbow macaroni
  • 1 tbsp cornstarch
  • 2 tsp garlic powder
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 3/4 cups shredded sharp cheddar cheese

Instructions

  1. Combine cornstarch, garlic powder, sugar, salt, paprika, and pepper in a small bowl and set aside
  2. Heat a large skillet over medium-high heat, brown ground beef and onion, breaking it up as it cooks until no pink remains, then drain excess fat
  3. Add milk, broth, and uncooked elbow macaroni to the beef, stir in the cornstarch mixture, and bring to a boil over medium-high heat
  4. Reduce heat to a gentle boil, cover, and cook 9-12 minutes or until pasta is tender, stirring occasionally and adding more broth or water if needed
  5. Remove from heat and stir in cheese until melted

Notes

  • Use sharp cheddar for best flavor
  • Remove skillet from heat before adding cheese to prevent clumping
  • Add hot sauce or red pepper flakes for extra kick
