Scrambled Eggs

Ingredients
- 4 large eggs
- 2 tbsp butter
- 2 tbsp milk or cream
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- Crack eggs into a bowl, add milk, salt, and pepper, whisk until uniform
- Melt butter in a nonstick skillet over medium-low heat
- Pour in eggs and let sit for 20 seconds until edges begin to set
- Gently push eggs from edges to center with a spatula, forming soft curds
- Continue pushing every 15-20 seconds, keeping curds large and soft
- Remove from heat while eggs are still slightly wet -- they will finish cooking from residual heat
- Garnish with chives if using
Notes
- Low and slow is the key to creamy eggs
- Remove from heat early, overcooked scrambled eggs are dry
