Scrambled Eggs

Ingredients

  • 4 large eggs
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • Salt and pepper to taste
  • Chives for garnish (optional)

Instructions

  1. Crack eggs into a bowl, add milk, salt, and pepper, whisk until uniform
  2. Melt butter in a nonstick skillet over medium-low heat
  3. Pour in eggs and let sit for 20 seconds until edges begin to set
  4. Gently push eggs from edges to center with a spatula, forming soft curds
  5. Continue pushing every 15-20 seconds, keeping curds large and soft
  6. Remove from heat while eggs are still slightly wet -- they will finish cooking from residual heat
  7. Garnish with chives if using

Notes

  • Low and slow is the key to creamy eggs
  • Remove from heat early, overcooked scrambled eggs are dry
