Pancakes

Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- 1 1/4 cups milk
- 1 egg
- 3 tbsp melted butter
- Butter and maple syrup for serving
Instructions
- Whisk flour, baking powder, sugar, and salt in a large bowl
- Make a well in the center, pour in milk, egg, and melted butter
- Mix until just combined -- some small lumps are fine
- Heat a griddle or skillet over medium heat and lightly grease
- Pour 1/4 cup batter per pancake onto the griddle
- Cook until bubbles form on the surface and edges look set, about 2 minutes
- Flip and cook until golden brown on the other side, about 1 minute
- Serve with butter and maple syrup
Notes
- Do not overmix the batter, lumps are good
- Let batter rest 5 minutes for fluffier pancakes
