Breakfast Burritos

Ingredients

  • 4 large flour tortillas
  • 6 eggs, scrambled
  • 4 slices bacon or 1/2 lb breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • Salt and pepper to taste
  • Salsa for serving

Instructions

  1. Cook bacon or sausage and set aside
  2. Saute bell pepper and onion in a skillet until softened, about 3 minutes
  3. Scramble eggs and season with salt and pepper
  4. Warm tortillas in a dry skillet or microwave for 15 seconds
  5. Layer eggs, meat, cheese, and veggies in each tortilla
  6. Fold bottom up, then sides in, and roll tightly
  7. Serve with salsa

Notes

  • Wrap individually in foil and freeze for up to 1 month
  • Reheat from frozen in microwave for 2-3 minutes, flipping halfway
