Breakfast Burritos

Ingredients
- 4 large flour tortillas
- 6 eggs, scrambled
- 4 slices bacon or 1/2 lb breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- Salt and pepper to taste
- Salsa for serving
Instructions
- Cook bacon or sausage and set aside
- Saute bell pepper and onion in a skillet until softened, about 3 minutes
- Scramble eggs and season with salt and pepper
- Warm tortillas in a dry skillet or microwave for 15 seconds
- Layer eggs, meat, cheese, and veggies in each tortilla
- Fold bottom up, then sides in, and roll tightly
- Serve with salsa
Notes
- Wrap individually in foil and freeze for up to 1 month
- Reheat from frozen in microwave for 2-3 minutes, flipping halfway
